Let me be honest – I have been a bit of a pesto pessimist in the past. Don’t get me wrong, I love pesto, it’s extremely versatile from pizza to pasta to chicken to fish but jarred pesto on anything just wasn’t doin’ it for me.
The last time I was really craving pesto I decided to dig a little deeper and figure out how tricky it would be to make a batch It turns out that it is really easy to make pesto from scratch and even easier when you use a Vitamix blender!
Ta-Da the Positively Perfect Pesto!
Here’s what you need:

- Basil 3 heaping cups
- Pine Nuts 1/3 cup (hint: I like to toast mine to bring out their flavor)
- Extra Virgin Olive Oil 1/2 cup
- Parmesan cheese 1/2 cup (hint: I like shaved Parm to grind in the Vitamix for a bolder flavor than pre-ground)
- Garlic Cloves 4 medium cloves
- Fresh lemon juice 3 tablespoons
- Salt and Pepper to taste
Here’s what you do:
Step one: Prep and Prepare – pick basil leaves of their stems, wash and pat dry, collect 3 heaping cups in a mixing bowl. Peal your garlic cloves. Wash your lemon and use a lemon squeezer to collect 3 tablespoons of fresh lemon juice.
Step two: Time to Grind – secure the locking lid to your Vitamix and remove the lid plug. Set your Vitamix speed to 3 and while machine is running feed the shaved parmesan through the lid plug hole. Run until cheese in finely ground.
Step Three: Everyone Joins the Party – remove the lid to your Vitamix. Leaving the ground Parmesan in the bottom add garlic, basil, pine nuts and lemon juice. Secure your locking lid and set your Vitamix speed to 10. Turn your Vitamix on and use your accelerator Tool to push ingredients down towards the blade. Setting the Accelerator Tool aside, use the lid plug hold to pour in a slow steady stream of olive oil. Continue to blend to desired thickness and consistency.
